Default Nutrient tending

The more I dig, the more confused I get. A simple question, I think. --- I am growing basic vegetables, lettuce, spinach, boc choy, etc. and now trying dwarf tomatoes. My question, how do I best guess when to change or dump and start over with my solutions. I am using ebb and flow, and doing what I consider OK. Can’t find a good article on measuring and controlling EC and PH. How do I know when it is best to dump the old and mix up a new batch? --- What brand of nutrients do you use, why and how do you like them? I am now using Fox-farm and am not 100% sure. Thanks for all thoughts and suggestions.
